One time purchase vs Subscription
The most critical difference between Quickbooks Pro and Pro Plus is that Pro is available for a one-time license-free. Pro Plus can only be purchased as a subscription. As of now, Quickbooks is pushing the Pro users to upgrade to Pro Plus. If you are a Quickbooks Pro user and do not want any support from Quickbooks, you can stay with the Pro version and not upgrade to Pro Plus.
Validity of the purchase
A one-time purchase of the Pro version entitles you to use the software for a maximum of 3 years. Pro Plus can be bought based on a monthly or yearly subscription, and usage rights terminate when you stop the subscription payment.

The Pro Plus version comes with free yearly product upgrades and security patches. The Pro version is locked to the version that you purchased, and an upgrade can only be done by moving to Pro Plus as of now. Pro Plus also gets first access to new features.
The Pro Plus version comes with unlimited phone support in case you end up with problems or need help negotiating an organizational requirement. With the pro version, you are pretty much left with community support through the forums.

Quickbooks Pro is a good option for a small and medium business that just needs robust accounting software and does not care about the latest and greatest features.
If you are already using Quickbooks Pro, you can continue using it till your 3-year window exceeds, after which you will have to move to Pro Plus. Considering the fact that Quickbooks is completely moving to cloud-based offerings, it may be better to move to Quickbooks Cloud at that point rather than moving to Quickbooks Pro Plus.
